Rational application of N, P and Zn facilitated the increase of rice yield and amylose content, while the protein content of rice was the highest in treatment and increased by 26.80% compared with the control, indicating that increasing nitrogen fertilizer is beneficial to increasing protein content in rice and increasing Applying zinc fertilizer on the basis of nitrogen fertilizer is more conducive to increasing protein content in rice, which may be due to the synergistic effect between nitrogen and zinc, but whether this needs further study.

Nitrogen nutrition had the greatest impact on rice yield. Zinc had greater effect on rice yield than phosphorus. With the increase of nitrogen and phosphorus levels, rice yield increased at first and then decreased, indicating that insufficient or excessive nitrogen and phosphorus were not favorable for rice. With the increase of yield, with the increase of zinc level, the rice yield showed a clear upward trend, indicating that increasing zinc fertilizer is beneficial to increase rice yield.

After testing the white rice milled rice, it was found that the protein content of rice is the main indicator of nutritional quality. The level of amylose content is closely related to the viscous, softness, glossiness and other food quality of rice. This study shows that : The effect of nitrogen, phosphorus and zinc on rice protein and amylose content is: nitrogen> zinc> phosphorus. With the increase of nitrogen application, the protein content of rice gradually increased.
